Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels (canned, fresh, or frozen)
  • 1 cup salsa
  • 2 cups shredded Mexican blend cheese
  • 6 large flour tortillas
  • 1/2 cup sour cream (optional)
  • Sliced green onions, diced tomatoes, and chopped cilantro for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. In a skillet over medium heat, cook ground beef until no longer pink. Drain excess fat.
  3. Add taco seasoning and water. Simmer for 2–3 minutes until thickened.
  4. Stir in black beans, corn, and salsa. Heat through and remove from heat.
  5. Place 2 tortillas on the bottom of the prepared dish, overlapping to cover the base.
  6. Spread 1/3 of the meat mixture over the tortillas and sprinkle with 1/3 of the cheese.
  7. Repeat layers two more times, ending with cheese on top.
  8. Cover with foil and bake for 20 minutes. Remove foil and bake an additional 10 minutes until cheese is melted and bubbly.
  9. Let rest for 10 minutes before slicing. Top with sour cream, green onions, tomatoes, and cilantro if desired.

Notes

  • You can substitute ground turkey or chicken for a lighter version.
