- 1 pound ground beef
- 1 packet taco seasoning
- 1/2 cup water
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels (canned, fresh, or frozen)
- 1 cup salsa
- 2 cups shredded Mexican blend cheese
- 6 large flour tortillas
- 1/2 cup sour cream (optional)
- Sliced green onions, diced tomatoes, and chopped cilantro for garnish (optional)
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- In a skillet over medium heat, cook ground beef until no longer pink. Drain excess fat.
- Add taco seasoning and water. Simmer for 2–3 minutes until thickened.
- Stir in black beans, corn, and salsa. Heat through and remove from heat.
- Place 2 tortillas on the bottom of the prepared dish, overlapping to cover the base.
- Spread 1/3 of the meat mixture over the tortillas and sprinkle with 1/3 of the cheese.
- Repeat layers two more times, ending with cheese on top.
- Cover with foil and bake for 20 minutes. Remove foil and bake an additional 10 minutes until cheese is melted and bubbly.
- Let rest for 10 minutes before slicing. Top with sour cream, green onions, tomatoes, and cilantro if desired.
Notes
- You can substitute ground turkey or chicken for a lighter version.
- Add chopped jalapeños or hot sauce to the meat mixture for extra spice.
- This dish can be made ahead and refrigerated for up to 2 days before baking.
