Description
This hearty and flavorful Portuguese kale soup, also known as Caldo Verde, is a traditional dish made with kale, potatoes, chorizo, and garlic in a savory broth. It’s a comforting and wholesome soup perfect for any season.

- 1 tablespoon olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 lb potatoes, peeled and diced
- 6 cups chicken or vegetable broth
- 1/2 lb chorizo or linguica sausage, thinly sliced
- 4 cups chopped kale (preferably curly or collard-style)
- Salt and pepper, to taste
- Olive oil, for drizzling (optional)
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onion and cook for 3–4 minutes until translucent.
- Add minced garlic and cook for 1 minute until fragrant.
- Stir in the potatoes and broth. Bring to a boil, then reduce heat and simmer for 15–20 minutes until potatoes are tender.
- Using an immersion blender (or transferring part to a blender), puree about half of the soup to create a creamy base while keeping some chunks for texture.
- Add sliced sausage and chopped kale. Simmer for another 10–15 minutes until kale is tender and sausage is heated through.
- Season with salt and pepper to taste. Drizzle with extra olive oil before serving if desired.
Notes
- Use linguica for a more authentic Portuguese flavor if available.
- Blend more or less of the soup depending on your preferred texture.
- Leftovers store well in the fridge for up to 4 days and taste even better the next day.
