Description

This hearty and flavorful Portuguese kale soup, also known as Caldo Verde, is a traditional dish made with kale, potatoes, chorizo, and garlic in a savory broth. It’s a comforting and wholesome soup perfect for any season.


Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 lb potatoes, peeled and diced
  • 6 cups chicken or vegetable broth
  • 1/2 lb chorizo or linguica sausage, thinly sliced
  • 4 cups chopped kale (preferably curly or collard-style)
  • Salt and pepper, to taste
  • Olive oil, for drizzling (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and cook for 3–4 minutes until translucent.
  2. Add minced garlic and cook for 1 minute until fragrant.
  3. Stir in the potatoes and broth. Bring to a boil, then reduce heat and simmer for 15–20 minutes until potatoes are tender.
  4. Using an immersion blender (or transferring part to a blender), puree about half of the soup to create a creamy base while keeping some chunks for texture.
  5. Add sliced sausage and chopped kale. Simmer for another 10–15 minutes until kale is tender and sausage is heated through.
  6. Season with salt and pepper to taste. Drizzle with extra olive oil before serving if desired.

Notes

  • Use linguica for a more authentic Portuguese flavor if available.
  • Blend more or less of the soup depending on your preferred texture.
  • Leftovers store well in the fridge for up to 4 days and taste even better the next day.
