Description

This Grilled Cheese Burrito is everything you love about comfort food rolled into one: melty cheese, flavorful beef, creamy chipotle sauce, seasoned rice, and a golden grilled cheese crust on the outside. It’s crispy on the outside, gooey on the inside, and totally satisfying. Great for dinner, lunch, or your next at-home fast food fix!


Ingredients

For the Burrito Filling:

  • 1 lb ground beef (or ground turkey/plant-based alternative)

  • 1 packet taco seasoning

  • 1/3 cup water

  • 1 cup cooked seasoned rice (like Mexican or cilantro-lime)

  • 1/2 cup sour cream

  • 1/4 cup chipotle sauce or spicy mayo

  • 1 cup shredded cheddar cheese

  • 1 cup shredded Monterey Jack cheese

  • 1/2 cup nacho cheese sauce (store-bought or homemade)

  • 1/2 cup crushed tortilla chips (for crunch)

  • 4 large flour tortillas (burrito-size)

For the Grilled Cheese Exterior:

 

  • 1/2 cup shredded cheddar + Monterey Jack mix

  • 1 tbsp butter or oil (for grilling)


Instructions

  • Cook the beef:
    In a skillet over medium heat, cook ground beef until browned. Drain excess fat. Add taco seasoning and water. Simmer until thickened, about 3–5 minutes. Set aside.

  • Warm the tortillas:
    Microwave tortillas for 15–20 seconds or warm in a pan until soft and pliable.

  • Assemble the burritos:
    In each tortilla, layer:

    • A scoop of seasoned rice

    • Cooked beef

    • A spoonful of nacho cheese

    • A sprinkle of shredded cheese

    • A dollop of sour cream

    • A drizzle of chipotle sauce

    • Crushed tortilla chips for crunch

    Roll tightly into a burrito.

  • Grill with cheese:
    Heat a clean skillet over medium heat. Add a small handful of shredded cheese directly to the pan in the shape of your burrito. Once cheese starts melting, place the burrito seam-side down on top. Press slightly and let cook for 2–3 minutes, until the cheese sticks and gets crispy. Flip and toast the other side for 1–2 more minutes.

 

  • Serve:
    Slice in half and serve hot with salsa, guacamole, or extra chipotle sauce on the sid


Notes

  • Want it spicier? Add jalapeños or hot sauce inside.

  • Swap beef for black beans or seasoned tofu for a vegetarian version.
