Description

These hearty and flavorful Beef and Bean Burritos combine seasoned ground beef with creamy refried beans and melted cheddar cheese, all wrapped in warm flour tortillas. Perfect for a quick and satisfying weeknight dinner, they can be customized with your favorite toppings like salsa, sour cream, or jalapeños.

Ingredients

Scale

Beef Mixture

  • 1 pound ground beef
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or 2 tablespoons homemade seasoning)
  • 1/3 cup water

Bean Mixture

  • 1 can (15 oz) refried beans
  • 1 cup shredded cheddar cheese

Assembly

  • 6 large flour tortillas (10-inch)
  • 1/2 cup salsa (optional)

Optional Toppings

  • Sour cream
  • Chopped cilantro
  • Diced tomatoes
  • Jalapeños
  • Shredded lettuce

Instructions

  1. Cook the beef and onions: In a large skillet over medium heat, add the ground beef and diced onions. Cook until the beef is browned and fully cooked, about 7 to 8 minutes, breaking it up as it cooks. Drain any excess grease if needed.
  2. Add garlic and season: Stir in the minced garlic and cook for an additional 1 minute until fragrant. Then add the taco seasoning packet and 1/3 cup water. Stir to combine, and let the mixture simmer for 2 to 3 minutes to allow the flavors to meld.
  3. Incorporate refried beans and cheese: Add the refried beans to the skillet and stir until fully combined and heated through. Remove the skillet from heat, then mix in the shredded cheddar cheese until melted and evenly combined.
  4. Warm the tortillas: Heat the flour tortillas briefly in a dry skillet, microwave, or oven until they are warm and pliable, making them easier to roll.
  5. Assemble the burritos: Spoon the beef and bean mixture evenly down the center of each tortilla. Add salsa if using. Fold in the sides of the tortilla and roll tightly to enclose the filling.
  6. Serve and garnish: Serve the burritos warm with optional toppings such as sour cream, chopped cilantro, diced tomatoes, jalapeños, and shredded lettuce as desired.

Notes

  • These burritos can be wrapped individually in foil and stored in the refrigerator for 3 to 4 days or frozen for up to 2 months.
  • Reheat frozen burritos in the microwave or oven until warmed through.
  • For a healthier option, use whole wheat or gluten-free tortillas.
  • Customize the filling by adding cooked rice, different cheeses, or sautéed vegetables if desired.
