Description

These BBQ Beer-Marinated Chicken Skewers are tender, flavorful, and packed with smoky-sweet goodness. The chicken is marinated in a bold blend of beer, BBQ sauce, and spices, then grilled or broiled to perfection. Perfect for cookouts, weeknight dinners, or party platters!


Ingredients

1 1/2 lbs boneless, skinless chicken thighs or breasts, cut into 1.5-inch chunks

1/2 cup beer (lager or ale works well)

1/3 cup BBQ sauce (plus more for brushing)

2 tbsp olive oil

1 tbsp brown sugar

2 cloves garlic, minced

1 tsp smoked paprika

1/2 tsp onion powder

1/2 tsp salt

1/4 tsp black pepper

Wooden or metal skewers


Instructions

  1. Marinate the chicken:
    In a large bowl or zip-top bag, combine beer, BBQ sauce, olive oil, brown sugar, garlic, paprika, onion powder, salt, and pepper. Add chicken and mix well. Cover and refrigerate for at least 1 hour, or up to 8 hours for deeper flavor.

  2. Prepare the skewers:
    If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. Thread marinated chicken onto the skewers, leaving a little space between each piece.

  3. Grill or broil:

    • Grill: Preheat grill to medium-high. Grill skewers for 10–12 minutes, turning occasionally and brushing with extra BBQ sauce during the last few minutes, until the chicken is cooked through and lightly charred.

    • Broil: Place skewers on a foil-lined baking sheet. Broil on high for 10–12 minutes, flipping once and brushing with BBQ sauce until nicely browned and cooked through.

  4. Serve:
    Remove from heat and let rest for a few minutes. Serve hot with extra BBQ sauce, grilled veggies, or corn on the cob.


Notes

  • Use your favorite beer for different flavor profiles—lighter beers for subtle taste, darker beers for a richer flavor.

  • Can also be made with pork or tofu for variation.
