Instructions

  2. Prepare the Custard Mixture: In a saucepan, combine the remaining 3/4 cup milk, sugar, and egg yolks. Cook over medium heat, stirring constantly, until the mixture thickens slightly and coats the back of a spoon without boiling to avoid curdling.
  3. Dissolve the Gelatin: Remove the saucepan from heat and stir in the bloomed gelatin until it is fully dissolved into the warm custard mixture. Allow the custard to cool to room temperature, ensuring it doesn’t set prematurely.
  4. Whip the Cream: In a separate bowl, whip the heavy cream until soft peaks form, creating a light and airy texture.
  5. Combine Custard and Cream: Gently fold the cooled custard mixture into the whipped cream until fully incorporated, maintaining the lightness of the cream without deflating it.
  6. Chill to Set: Pour the combined Bavarian cream into serving glasses or ramekins and refrigerate for at least 4 hours until the dessert is fully set and firm.
