Ingredients
Scale
Tomatoes and Seasoning
- 2 pints cherry tomatoes
- 3 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 2 teaspoons sugar
- 2 cloves garlic, minced
- Kosher salt, to taste
- Freshly ground black pepper, to taste
Salad Components
- 1 pound fresh mozzarella, sliced or in small balls
- 1/4 cup fresh basil leaves, torn
Optional Garnish
- Extra olive oil, for drizzling
- Extra balsamic vinegar, for drizzling
Instructions
- Preheat the oven: Set your oven to 400°F (200°C) to prepare for roasting the tomatoes.
- Prepare tomatoes: Place the cherry tomatoes on a sheet pan and drizzle evenly with olive oil and balsamic vinegar. Sprinkle with sugar, minced garlic, kosher salt, and freshly ground black pepper. Toss gently to ensure all tomatoes are well coated and spread them out in a single layer for even roasting.
- Roast the tomatoes: Place the sheet pan in the oven and roast the tomatoes for 20 to 25 minutes, or until they become tender, slightly caramelized, and start to release their juices.
- Cool the tomatoes: Remove the tomatoes from the oven and let them cool slightly to avoid melting the mozzarella when assembling the salad.
- Assemble the salad: On a serving platter, arrange the slices or balls of fresh mozzarella alongside the roasted cherry tomatoes in an attractive pattern.
- Add basil and finish: Sprinkle torn fresh basil leaves over the tomatoes and cheese. Drizzle additional olive oil and balsamic vinegar over the top if desired for extra flavor and shine.
- Serve: This salad can be served warm or at room temperature, making it a versatile choice for any meal or occasion.
Notes
- Use heirloom cherry tomatoes for added color and natural sweetness.
- Substitute burrata cheese for mozzarella if you prefer a creamier texture.
- This salad pairs wonderfully with grilled bread slices or as a fresh side dish with grilled meats.
