Coated with a vibrant, flavorful Bang Bang sauce made from mayonnaise, sweet chili, sriracha, and aromatic seasonings, these skewers make an irresistible appetizer or main course that’s perfect for a quick weeknight meal or a backyard barbecue.

Ingredients

Scale

Chicken Marinade

  • 2 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon cornstarch
  • 1 teaspoon ginger, grated
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Bang Bang Sauce

  • 1 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 2 tablespoons sriracha (or more, to taste)
  • 1 tablespoon rice vinegar
  • 1 teaspoon soy sauce
  • 1 teaspoon honey
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon red pepper flakes (optional)

Additional Ingredients

  • Bamboo skewers, soaked in water for at least 30 minutes
  • 2 tablespoons vegetable oil, for grilling
  • Chopped green onions, for garnish
  • Sesame seeds, for garnish (optional)

Instructions

  1. Marinate the Chicken: In a medium bowl, combine chicken cubes with soy sauce, rice vinegar, cornstarch, grated ginger, minced garlic, salt, and black pepper. Mix thoroughly to ensure even coating of the chicken.
  2. Refrigerate the Chicken: Cover the bowl and refrigerate the mixture for at least 30 minutes, or up to 2 hours to let the flavors deepen.
  3. Prepare the Bang Bang Sauce: In a separate bowl, whisk together mayonnaise, sweet chili sauce, sriracha, rice vinegar, soy sauce, honey, garlic powder, and optional red pepper flakes until smooth. Cover and keep refrigerated until ready to serve.
  4. Skewer the Chicken: Thread the marinated chicken pieces onto the soaked bamboo skewers, leaving a small space between each piece to ensure even cooking.
  5. Preheat the Grill: Heat your grill to medium-high and lightly oil the grates to prevent sticking.
  6. Oil and Grill the Skewers: Brush the chicken skewers with vegetable oil and place them on the hot grill.
  7. Cook the Chicken: Grill the skewers for 8-10 minutes, turning occasionally to achieve an even char and cook through. Verify the internal temperature reaches 165°F (74°C) for safe consumption.
  8. Serve: Remove the chicken skewers from the grill, drizzle or dip in the Bang Bang sauce, and garnish with chopped green onions and optional sesame seeds for added flavor and presentation.

Notes

  • Soak bamboo skewers in water for at least 30 minutes before grilling to prevent them from burning.
  • Adjust sriracha quantity in the Bang Bang sauce to control the spice level according to your preference.
  • Ensure chicken is cooked to an internal temperature of 165°F (74°C) to ensure safety.
  • This recipe can be prepared ahead by marinating the chicken and making the sauce in advance.
  • For a healthier option, use light mayonnaise or Greek yogurt in the Bang Bang sauce.
  • Oven broiling can be used as an alternative cooking method if a grill is not available.
