Description

A delicious twist on classic fried rice, this Bang Bang Chicken Fried Rice is packed with flavor and a hint of heat. Tender chicken, crisp vegetables, and a creamy, spicy sauce come together to create a satisfying one-pan meal that’s perfect for a quick weeknight dinner.

For the Bang Bang Sauce:

  • 1/2 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon honey
  • 1 teaspoon Sriracha sauce

For the Fried Rice:

  • 2 cups cooked rice, chilled
  • 1 chicken breast, diced
  • 1 red bell pepper, diced
  • 1 cup frozen peas and carrots, thawed
  • 2 eggs, beaten
  • 2 green onions, chopped
  • Soy sauce, to taste
  • Salt and pepper, to taste
  • Vegetable oil, for cooking

Instructions

  1. Make the Bang Bang Sauce: In a small bowl, mix together the mayonnaise, sweet chili sauce, honey, and Sriracha sauce until well combined. Set aside.
  2. Cook the Chicken: In a large skillet or wok, heat some vegetable oil over medium-high heat. Add the diced chicken and cook until browned and cooked through. Remove from the skillet and set aside.
  3. Prepare the Fried Rice: In the same skillet, add a bit more oil if needed. Add the bell pepper and cook until slightly softened. Push the pepper to one side and pour in the beaten eggs. Scramble the eggs until cooked, then mix with the bell pepper.
  4. Assemble the Dish: Add the chilled rice, peas, and carrots to the skillet. Stir in the cooked chicken and green onions. Pour the Bang Bang Sauce over the rice and mix everything together until well coated. Season with soy sauce, salt, and pepper to taste.
  5. Serve: Divide the Bang Bang Chicken Fried Rice among plates and garnish with extra green onions. Enjoy hot!

Notes

  • You can adjust the spiciness of the Bang Bang Sauce by adding more or less Sriracha sauce.
