  • 1 1/3 cups sugar
  • 3/4 cup unsalted butter, room temperature
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 cup walnuts, chopped

Custard for French Toast

  • 1 egg
  • 1 cup milk
  • 1 tbsp sugar
  • 1 tsp vanilla extract
  • 1 tsp cinnamon

Bananas Foster Sauce

  • 2 tbsp butter
  • 1/4 cup brown sugar
  • pinch of salt
  • 1 tsp vanilla extract
  • 1/4 tsp cinnamon
  • 1/4 cup spiced rum
  • 1 banana, sliced
  • 1/2 cup walnuts


Instructions

  1. Preheat Oven – Preheat your oven to 375°F (190°C). Spray a loaf pan with nonstick baking spray and set it aside to prepare for the banana bread batter.
  2. Prepare Banana Bread Batter – In a mixing bowl, add the eggs and sugar and whisk until the sugar is mostly dissolved. Then mix in mashed bananas, softened butter, and vanilla extract until combined.
  3. Add Dry Ingredients – To the wet mixture, add gluten-free flour, baking powder, cinnamon, and kosher salt. Mix gently until just combined to avoid overmixing.
  4. Fold in Walnuts – Gently fold in the chopped walnuts to distribute evenly throughout the batter.
  5. Bake Banana Bread – Pour the batter into the prepared loaf pan and spread it evenly. Bake for 30 to 40 minutes until the top is golden brown and a toothpick inserted comes out clean. Let it cool completely.
