- Prepare the crust: Preheat your oven to 325°F (160°C) and line a mini muffin pan with paper liners. In a small bowl, mix the crushed vanilla wafers with the melted butter until well combined. Press about 1 teaspoon of this mixture into the bottom of each muffin liner, gently pressing down to form an even crust layer.
- Make the filling: In a medium bowl, beat the softened cream cheese and granulated sugar together until smooth and creamy. Add the egg, vanilla extract, banana extract (or mashed banana), and sour cream. Mix thoroughly until the filling is creamy and well combined, ensuring no lumps remain.
- Assemble and bake: Spoon the banana-flavored cream cheese filling over the prepared crusts in the muffin liners, filling each nearly to the top. Place the pan in the preheated oven and bake for 15 to 18 minutes, or until the centers are just set but still slightly jiggly.
- Cool and chill: Remove the pan from the oven and allow the cheesecake bites to cool completely in the pan. Once cooled, transfer to the refrigerator and chill for at least 2 hours to firm up and develop flavor.
