Description

Banana Pudding Cheesecake Bites are delightful mini desserts that blend the creamy richness of cheesecake with the nostalgic flavor of banana pudding. Featuring a crunchy vanilla wafer crust and a smooth, banana-flavored filling, these bite-sized treats are perfect for parties, holidays, or whenever you want a sweet, portion-controlled indulgence.

Ingredients

Scale

Crust

  • 1 cup crushed vanilla wafer cookies
  • 3 tablespoons unsalted butter, melted

Filling

  • 8 oz cream cheese, softened
  • ½ cup granulated sugar
  • 1 egg
  • ½ teaspoon vanilla extract
  • ½ teaspoon banana extract or 1 small ripe banana, mashed
  • ¼ cup sour cream

Garnish (Optional)

  • 12 mini vanilla wafers
  • Whipped cream

Instructions

  1. Prepare the crust: Preheat your oven to 325°F (160°C) and line a mini muffin pan with paper liners. In a small bowl, mix the crushed vanilla wafers with the melted butter until well combined. Press about 1 teaspoon of this mixture into the bottom of each muffin liner, gently pressing down to form an even crust layer.
  2. Make the filling: In a medium bowl, beat the softened cream cheese and granulated sugar together until smooth and creamy. Add the egg, vanilla extract, banana extract (or mashed banana), and sour cream. Mix thoroughly until the filling is creamy and well combined, ensuring no lumps remain.
  3. Assemble and bake: Spoon the banana-flavored cream cheese filling over the prepared crusts in the muffin liners, filling each nearly to the top. Place the pan in the preheated oven and bake for 15 to 18 minutes, or until the centers are just set but still slightly jiggly.
  4. Cool and chill: Remove the pan from the oven and allow the cheesecake bites to cool completely in the pan. Once cooled, transfer to the refrigerator and chill for at least 2 hours to firm up and develop flavor.
  5. Serve and garnish: Before serving, top each bite with a dollop of whipped cream and a mini vanilla wafer for a decorative and flavorful finish, if desired.

Notes

  • You can substitute banana extract with banana pudding mix for a more intense banana flavor.
  • Store the cheesecake bites in an airtight container in the refrigerator for up to 5 days.
  • For longer storage, freeze the bites and thaw in the refrigerator before serving.
