- 2 1/4 teaspoons active dry yeast
- 1/4 cup warm water (110°F)
- 1/2 cup mashed ripe banana (about 1 large banana)
- 1/4 cup granulated sugar
- 1/4 cup unsalted butter, melted
- 1/4 cup milk, warm
- 1/2 teaspoon salt
- 1 large egg
- 2 1/2 to 3 cups all-purpose flour
- 1/2 cup brown sugar, packed
- 1 tablespoon ground cinnamon
- 1/4 cup unsalted butter, softened (for filling)
- 4 oz cream cheese, softened
- 1/4 cup unsalted butter, softened (for frosting)
- 1 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 1–2 tablespoons milk (to desired consistency)
Instructions
- In a small bowl, dissolve yeast in warm water and let sit for 5-10 minutes until foamy.
- In a large bowl, mix mashed banana, sugar, melted butter, warm milk, salt, egg, and the yeast mixture.
- Gradually add flour, 1 cup at a time, until a soft dough forms. Knead for about 5-7 minutes until smooth and elastic.
- Place dough in a greased bowl, cover, and let rise in a warm place for about 1 hour or until doubled in size.
- In a small bowl, mix brown sugar and cinnamon for the filling.
- Punch down dough and roll into a rectangle about 12×16 inches. Spread softened butter over the dough and sprinkle with cinnamon-sugar mixture.
- Roll up the dough tightly from the long side and cut into 12 equal rolls.
- Place rolls in a greased 9×13 inch pan. Cover and let rise for another 30-45 minutes.
- Preheat oven to 350°F (175°C). Bake rolls for 20-25 minutes, or until golden brown.
- While baking, prepare frosting by beating cream cheese, butter, powdered sugar, vanilla, and milk until smooth.
- Let rolls cool slightly before spreading with cream cheese frosting. Serve warm.

- Use overripe bananas for best flavor and natural sweetness.
- Dough can be prepared the night before and refrigerated overnight before final rise.
- Feel free to add chopped nuts or chocolate chips to the filling for variation.
