Description

This Balsamic Tomato and Parmesan Asparagus Delight is a simple yet flavorful roasted vegetable side dish that combines tender asparagus, sweet cherry tomatoes, and a tangy balsamic finish. Topped with grated Parmesan cheese and fresh herbs, it makes a perfect healthy accompaniment to any meal, bringing a Mediterranean touch to your table.

Ingredients

Scale

Vegetables

  • 1 bunch fresh asparagus (trimmed)
  • 1 cup cherry tomatoes (halved)
  • 2 cloves garlic (minced)

Seasonings and Toppings

  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon fresh basil or parsley (chopped, optional)

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking and ease cleanup.
  2. Prepare Asparagus: Spread the trimmed asparagus in a single layer on the prepared baking sheet to ensure even roasting.
  3. Season Vegetables: Drizzle the asparagus with olive oil and sprinkle with salt and black pepper for balanced seasoning. Scatter the halved cherry tomatoes and minced garlic evenly over the asparagus.
  4. Roast: Place the baking sheet in the oven and roast for 15–18 minutes until the asparagus is tender but still slightly crisp, and the cherry tomatoes have blistered and softened.
  5. Add Balsamic and Toss: Remove the tray from the oven and immediately drizzle the balsamic vinegar over the vegetables. Toss gently to coat all the ingredients evenly with the tangy vinegar.
  6. Finish and Serve: Transfer the roasted asparagus and tomatoes to a serving platter. Sprinkle the freshly grated Parmesan cheese over the top and garnish with chopped fresh basil or parsley, if desired. Serve warm for best flavor.

Notes

  • For deeper flavor, use aged balsamic vinegar or finish with a drizzle of balsamic glaze instead of plain vinegar.
  • This dish pairs excellently with grilled chicken, steak, or pasta for a complete meal.
  • Asparagus can be substituted with other tender vegetables like green beans or broccolini if preferred.
