- 4 boneless, skinless chicken breasts
- 1 teaspoon garlic powder
- Salt and pepper, to taste
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon Italian seasoning
- 1/4 teaspoon crushed red pepper flakes (optional)
- 1/2 cup sun-dried tomatoes (packed in oil), drained and chopped
- 2 cups fresh spinach
- Fresh parsley, for garnish (optional)
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a baking dish.
- Season chicken breasts with garlic powder, salt, and pepper. In a large skillet, heat olive oil over medium-high heat and sear chicken for 2–3 minutes per side until golden. Transfer to the baking dish.
- In the same skillet, add garlic and cook for 1 minute until fragrant. Stir in heavy cream, chicken broth, Parmesan, Italian seasoning, and red pepper flakes. Bring to a simmer.
- Add sun-dried tomatoes and spinach, cooking just until spinach wilts. Pour the sauce over the chicken in the baking dish.
- Bake for 20–25 minutes or until chicken reaches an internal temperature of 165°F (74°C).
- Garnish with fresh parsley and serve warm with rice, mashed potatoes, or steamed vegetables.

- Use chicken thighs for a juicier alternative.
- For extra flavor, marinate chicken in garlic and herbs for 1 hour before cooking.
