Description

Delight in these Baked Apple Pie Rice Paper Rolls, a creative and healthier twist on classic apple pie. Tender baked apples infused with cinnamon and nutmeg are wrapped in crispy rice paper, then baked to golden perfection. Perfect as a guilt-free dessert or a cozy fall treat, these rolls are vegan friendly when coconut oil is used and pair wonderfully with vanilla yogurt or whipped cream.

Ingredients

Scale

Apple Filling

  • 4 medium apples, peeled, cored, and diced
  • 1 tablespoon lemon juice
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 teaspoon cornstarch
  • 1 tablespoon water

Rice Paper Rolls

  • 8–10 rice paper wrappers
  • 2 tablespoons melted butter or coconut oil (for brushing)
  • Cinnamon sugar, for sprinkling

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper to prepare for baking the rolls.
  2. Prepare Apple Filling: In a saucepan over medium heat, combine diced apples, lemon juice, brown sugar, cinnamon, and nutmeg. Cook for 5–7 minutes until the apples soften.
  3. Thicken Filling: Mix cornstarch and water in a small bowl; stir this mixture into the apple mixture. Cook for an additional 1–2 minutes until thickened. Remove from heat and allow to cool slightly.
  4. Soften Rice Paper: Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for about 10 seconds until pliable, then lay flat on a clean surface.
  5. Fill and Roll: Spoon 2–3 tablespoons of apple filling into the center of the softened rice paper. Fold the sides inwards and roll tightly like a burrito to enclose the filling.
  6. Repeat Rolls: Repeat dipping, filling, and rolling with the remaining wrappers and apple filling.
  7. Prepare for Baking: Place rolls seam-side down on the prepared baking sheet. Lightly brush each roll with melted butter or coconut oil and sprinkle with cinnamon sugar for extra flavor and crispness.
  8. Bake Rolls: Bake in the preheated oven for 20–25 minutes until the rolls are golden and crispy on the outside.
  9. Cool and Serve: Allow rolls to cool slightly before serving. They pair wonderfully with vanilla yogurt or whipped cream for dipping.

Notes

  • Serve warm with vanilla yogurt or whipped cream for a delicious dipping option.
  • For variety, try substituting pears in place of apples for a unique flavor twist.
  • Using coconut oil instead of butter makes this recipe vegan-friendly.
  • Ensure not to over-soak the rice paper, as it can become too fragile to roll properly.
