- 1 lb cooked shrimp, peeled and deveined
- 2 ripe avocados, diced
- 1 cup fresh salsa or pico de gallo
- 1/2 red onion, finely chopped
- 1/2 cup chopped cilantro
- 1 jalapeño, minced (optional)
- 2 tbsp lime juice
- 1 tbsp olive oil
- Salt and pepper to taste
- Lime wedges for garnish
Instructions
- In a mixing bowl, combine shrimp, avocado, salsa, red onion, cilantro, and jalapeño.
- Add lime juice and olive oil, tossing gently to mix.
- Season with salt and pepper to taste.
- Refrigerate for 10–15 minutes before serving.
- Serve with lime wedges on the side, on greens or with chips if desired.
Notes
- For extra flavor, use grilled shrimp.
- Add corn or black beans for variation.
- Prepare just before serving to keep avocado fresh.
