- 1 1/2 lbs boneless, skinless chicken breast or thighs, cut into 1-inch cubes
- 1/4 cup olive oil
- 2 tbsp fresh lemon juice
- 2 cloves garlic, minced
- 2 tsp dried oregano
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika (optional)
- Wooden or metal skewers
Instructions
- In a large bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, pepper, and paprika.
- Add chicken pieces to the marinade and toss to coat. Cover and refrigerate for at least 1 hour, preferably 4 hours or overnight.
- Preheat grill or grill pan over medium-high heat. If using wooden skewers, soak in water for 30 minutes beforehand.
- Thread marinated chicken onto skewers, leaving a bit of space between pieces.
- Grill skewers for 10–12 minutes, turning occasionally, until chicken is golden brown and fully cooked.
- Serve hot with pita bread, tzatziki sauce, tomatoes, onions, and a side of lemon wedges.
