- 4 cups fresh or frozen fruit (such as apples, berries, peaches, or a mix)
- 1/4 cup granulated sugar (adjust based on fruit sweetness)
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
- 1 cup rolled oats
- 1/2 cup all-purpose flour
- 1/2 cup brown sugar, packed
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
Instructions
- Preheat oven to 350°F (175°C). Grease an 8×8-inch baking dish.
- In a large bowl, toss the fruit with the granulated sugar, lemon juice, and cornstarch. Spread the fruit evenly in the prepared dish.
- In another bowl, mix the oats, flour, brown sugar, cinnamon, and salt. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- Sprinkle the oat crumble evenly over the fruit.
- Bake for 35-40 minutes, or until the topping is golden brown and the fruit is bubbling.
- Let cool slightly before serving. Serve warm with ice cream or whipped cream if desired.
Notes
- Mix and match fruits based on what’s in season — apple and blackberry, peach and blueberry, or rhubarb and strawberry are great combos.
- If using frozen fruit, there’s no need to thaw; just add a little extra cornstarch (1-2 teaspoons).
- Store leftovers covered in the refrigerator for up to 3 days.
