Scale
- 8 oz pasta (spaghetti, linguine, or your choice)
- 1 cup plain Greek yogurt
- 2 cloves garlic, minced
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1/2 teaspoon chili flakes (adjust to spice preference)
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook pasta according to package instructions. Reserve 1/4 cup of pasta water, then drain and set aside.
- In a bowl, combine Greek yogurt, garlic, salt, and pepper. Set aside.
- In a small pan over medium heat, melt the butter and olive oil together. Add paprika and chili flakes. Stir for 1–2 minutes until fragrant and slightly foamy. Remove from heat.
- Quickly mix the hot pasta into the yogurt mixture, adding a splash of pasta water to help create a silky sauce (yogurt should not curdle).
- Top with the warm chili butter and swirl to combine or serve drizzled on top.
- Garnish with fresh parsley and serve immediately.
Notes
- Make sure the pasta is not too hot when mixing with the yogurt to avoid curdling.
- Use full-fat Greek yogurt for the creamiest result.
- Try adding sautéed spinach or grilled chicken for extra substance.
- This dish is best served fresh and warm.
