Ingredients
Scale
For the bread:
- 1/3 cup light brown sugar
- 1 teaspoon ground cinnamon
- 2/3 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 1/2 teaspoons vanilla extract
- 1 1/2 cups all-purpose flour
- 1 3/4 teaspoons baking powder
- 1/2 cup milk
- 1 1/2 cups peeled and chopped apples (such as Granny Smith or Honeycrisp)
For the glaze:
- 1/2 cup powdered sugar
- 1–2 tablespoons milk
- 1/4 teaspoon vanilla extract
Instructions
- Preheat and prepare pan: Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan to prevent sticking.
- Mix cinnamon sugar: In a small bowl, combine the light brown sugar and ground cinnamon; set this mixture aside as it will be used for layering.
- Cream butter and sugar: In a large mixing bowl, beat the granulated sugar and softened butter together until the mixture is light, fluffy, and well combined.
- Add eggs and vanilla: Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Then stir in the vanilla extract for flavor.
- Combine dry ingredients: In another bowl, whisk together the all-purpose flour and baking powder to ensure even distribution.
- Mix batter: Gradually add the dry ingredients to the wet mixture, alternating with the milk. Start and end with the dry ingredients, gently mixing until just combined to avoid overmixing.
- Layer batter and apples: Pour half of the batter into the prepared loaf pan. Spread half of the chopped apples evenly over the batter, then sprinkle half of the cinnamon sugar mixture on top. Repeat with the remaining batter, apples, and cinnamon sugar.
- Swirl and prepare for baking: Lightly press the apples on top into the batter and use a knife to gently swirl the layers together for a marbled effect.
- Bake the bread: Bake in the preheated oven for 50–60 minutes, or until a toothpick inserted into the center comes out clean, indicating it is fully cooked.
- Cool the bread: Let the bread cool in the pan for 15 minutes before transferring it to a wire rack to cool completely.
- Prepare and drizzle glaze: Whisk together the powdered sugar, milk (start with 1 tablespoon and add more for desired consistency), and vanilla extract to make a smooth glaze. Drizzle this over the cooled bread for a sweet finishing touch.
Notes
- Best served the day it’s made to enjoy maximum freshness and flavor.
- Can be stored in an airtight container for up to 3 days without losing quality.
- For added texture, try incorporating chopped nuts such as walnuts or pecans into the batter.
- Swap apples for pears to create a unique twist, especially in the fall season.
