- 4 medium sweet potatoes
- 1 cup cooked black beans, drained and rinsed
- 1/2 cup corn kernels (fresh or frozen)
- 1/2 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon garlic powder
- 1/4 teaspoon paprika
- Salt and pepper to taste
- 1/4 cup shredded cheddar cheese (optional)
- 1 tablespoon olive oil
- Fresh cilantro, chopped (for garnish)
- Sour cream (optional, for serving)
Instructions
- Preheat the air fryer to 375°F (190°C).
- Wash and scrub the sweet potatoes. Pat them dry with a paper towel.
- Prick each sweet potato several times with a fork, then rub them with olive oil and season with a pinch of salt.
- Place the sweet potatoes in the air fryer basket and cook for 35-40 minutes, or until they are tender when pierced with a fork.
- While the sweet potatoes cook, prepare the filling. In a medium bowl, combine the black beans, corn, chili powder, cumin, garlic powder, paprika, salt, and pepper. Mix well.
- Once the sweet potatoes are cooked, carefully cut a slit down the center of each one and gently fluff the insides with a fork.
- Spoon the black bean and corn mixture into the center of each sweet potato, dividing it evenly.
- If using cheese, sprinkle the shredded cheddar over the filling.
- Return the stuffed sweet potatoes to the air fryer and cook for an additional 5-7 minutes, until the cheese is melted and the filling is heated through.
- Remove from the air fryer and garnish with fresh cilantro. Serve with sour cream, if desired.
Notes
- This recipe can easily be made vegan by omitting the cheese or using a dairy-free alternative.
- You can add other toppings like avocado, salsa, or a squeeze of lime for extra flavor.
- For added protein, try adding grilled chicken or ground turkey to the filling.
