Description

Ingredients

  • 4 medium sweet potatoes
  • 1 cup cooked black beans, drained and rinsed
  • 1/2 cup corn kernels (fresh or frozen)
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • Salt and pepper to taste
  • 1/4 cup shredded cheddar cheese (optional)
  • 1 tablespoon olive oil
  • Fresh cilantro, chopped (for garnish)
  • Sour cream (optional, for serving)

Instructions

  1. Preheat the air fryer to 375°F (190°C).
  2. Wash and scrub the sweet potatoes. Pat them dry with a paper towel.
  3. Prick each sweet potato several times with a fork, then rub them with olive oil and season with a pinch of salt.
  4. Place the sweet potatoes in the air fryer basket and cook for 35-40 minutes, or until they are tender when pierced with a fork.
  5. While the sweet potatoes cook, prepare the filling. In a medium bowl, combine the black beans, corn, chili powder, cumin, garlic powder, paprika, salt, and pepper. Mix well.
  6. Once the sweet potatoes are cooked, carefully cut a slit down the center of each one and gently fluff the insides with a fork.
  7. Spoon the black bean and corn mixture into the center of each sweet potato, dividing it evenly.
  8. If using cheese, sprinkle the shredded cheddar over the filling.
  9. Return the stuffed sweet potatoes to the air fryer and cook for an additional 5-7 minutes, until the cheese is melted and the filling is heated through.
  10. Remove from the air fryer and garnish with fresh cilantro. Serve with sour cream, if desired.

Notes

  • This recipe can easily be made vegan by omitting the cheese or using a dairy-free alternative.
  • You can add other toppings like avocado, salsa, or a squeeze of lime for extra flavor.
