Description
Air Fryer Southwest Egg Rolls are crispy, flavorful rolls stuffed with seasoned chicken, black beans, corn, and cheese. These make a perfect appetizer or snack, and are healthier than traditional fried egg rolls thanks to the air fryer.

- 2 tablespoons olive oil
- 1 lb cooked chicken breast, shredded
- 1/2 cup black beans, drained and rinsed
- 1/2 cup corn kernels (fresh or frozen)
- 1/2 cup shredded cheddar cheese
- 1/4 cup chopped green onions
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon garlic powder
- Salt and pepper to taste
- 8 small flour tortillas
- Olive oil spray (for spraying the egg rolls)
- Sour cream or salsa (for dipping, optional)
Instructions
- In a large mixing bowl, combine the shredded chicken, black beans, corn, cheddar cheese, green onions, cumin, chili powder, smoked paprika, garlic powder, salt, and pepper. Mix well to combine.
- Lay the tortillas flat on a clean surface. Spoon about 1/4 cup of the filling mixture into the center of each tortilla.
- Fold in the sides of the tortilla, then roll it up tightly like a burrito, securing the filling inside.
- Preheat the air fryer to 375°F (190°C) for 3-5 minutes.
- Lightly spray the egg rolls with olive oil spray to ensure they crisp up in the air fryer.
- Place the egg rolls in the air fryer basket in a single layer. Cook at 375°F (190°C) for 8-10 minutes, turning them halfway through, until golden brown and crispy on all sides.
- Remove the egg rolls from the air fryer and let them cool slightly before serving with sour cream or salsa for dipping, if desired.
Notes
- If you want to add some heat, you can include diced jalapeños or a pinch of cayenne pepper in the filling mixture.
- Feel free to swap out the chicken for ground beef, turkey, or even a vegetarian version with black beans and vegetables.
- If you’re making these ahead of time, you can freeze the unbaked egg rolls and air fry them straight from the freezer for an additional 2-3 minutes.
