Description

Air Fryer Avocado Eggs are a delicious and healthy keto-friendly breakfast option featuring creamy ripe avocados baked with eggs in an air fryer. This easy recipe provides a perfect balance of protein and healthy fats, seasoned with simple spices and garnished with fresh herbs for added flavor.

Ingredients

Scale

Avocado Eggs

  • 2 ripe avocados, halved and pitted
  • 4 small eggs
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon smoked paprika (optional)
  • Olive oil spray
  • Chopped chives or parsley for garnish

Instructions

  1. Preheat the air fryer: Set your air fryer to 375°F (190°C) and allow it to preheat while you prepare the avocados.
  2. Prepare the avocados: Scoop out a small amount of flesh from each avocado half to create enough space to hold an egg securely.
  3. Season and spray: Lightly spray the avocado halves with olive oil to prevent sticking and place them steadily in the air fryer basket.
  4. Add eggs: Crack one small egg into each avocado half, allowing any excess egg white to spill over slightly if needed.
  5. Season eggs: Sprinkle salt, black pepper, and smoked paprika over the eggs for flavor.
  6. Air fry: Cook the avocado halves with eggs in the air fryer for 8 to 10 minutes, or until the egg whites are set and yolks reach your preferred doneness. For firmer yolks, extend cooking time up to 12 minutes.
  7. Garnish and serve: Carefully remove the avocado eggs from the air fryer, garnish with chopped chives or parsley, and serve immediately.

Notes

  • For firmer yolks, cook for up to 12 minutes.
  • Try topping with shredded cheese, hot sauce, or crumbled bacon after cooking for extra flavor.
  • Use medium or small eggs to fit better inside the avocado halves.
