  • 1 can (15 oz) black beans, drained and rinsed
  • 1/2 cup cooked quinoa
  • 1/4 cup breadcrumbs (gluten-free if needed)
  • 2 tbsp ground flaxseed (mixed with 5 tbsp water to make a flax egg)
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 tbsp soy sauce or tamari
  • 1 tbsp tomato paste
  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin
  • 1/4 tsp black pepper
  • 1/4 tsp salt (adjust to taste)
  • 1 tbsp olive oil (for cooking)
  • 4 burger buns (gluten-free if needed)
  • Your favorite toppings (lettuce, tomato, pickles, vegan cheese, etc.)

Instructions

  1. In a large mixing bowl, mash the black beans with a fork or potato masher, leaving some chunks for texture.
  2. In a separate bowl, mix the ground flaxseed with water and let it sit for 5 minutes to form a flax egg.
  3. Add cooked quinoa, breadcrumbs, flax egg, diced onion, minced garlic, soy sauce, tomato paste, smoked paprika, cumin, salt, and pepper to the mashed black beans. Stir everything together until well combined.
  4. Form the mixture into 4 even patties, pressing them firmly so they hold together.
  5. Heat the olive oil in a skillet over medium heat. Once hot, add the patties and cook for 4–5 minutes per side, or until golden brown and crispy on the outside. Alternatively, grill the patties over medium heat for about 4–5 minutes per side.
  6. Toast the burger buns, if desired, and assemble the burgers with your favorite toppings like lettuce, tomato, pickles, and vegan cheese.

Notes

  • If the mixture is too wet to form patties, add more breadcrumbs until it holds together.
  • You can also bake the patties at 375°F (190°C) for 20-25 minutes, flipping halfway through, for a lower-fat version.
